Kevin Flaherty and Tamar Haspel are the husband-wife team behind Barnstable Oyster. They moved to Cape Cod, from the Upper West Side of Manhattan, in 2008 and became fascinated with oyster farming. Kevin’s always wanted to be a farmer, and Tamar really likes to eat oysters. It was a natural partnership.
After spending a year working with one of the most experienced oyster growers on the Cape, Kevin started Barnstable Oyster. Since its first crop in 2011, the company has worked with its partner in oysters, W&T Seafood, to bring shellfish to some of the best restaurants in New York City.
When she’s not helping Kevin on the farm, Tamar writes about food. She has a James Beard Award-winning column in the Washington Post, and contributes to National Geographic, Fortune, and Edible Cape Cod, among others. She also writes about the oyster farm and other food-related endeavors at Starving off the Land.
